Nothing spells comfort quite like a bowl of spaghetti with a chunky bolognese sauce. Unfortunately, it?s also recipe that can leave you feeling sluggish and uncomfortably full. The heavy combination of meat and starch is definitely a classic, but the combo can also be tough to digest. Luckily, mother nature has graced us with the meaty vegetables that can give us the comfort food without curbing the diet.?Mushrooms are the cornerstone of this dish and not only seamlessly replace the need for meat but also provide you a dose of fiber,?antioxidants, and immune-strengthening vitamins C, B6, and B12. Serve over whole-grain pasta and you have yourself a dinner that won?t leave you feeling in the dumps.
Recipe: Meat-Free Mushroom Bolognese
Serves 2
What You?ll Need:
2 cups chopped crimini mushrooms
1 large onion
1 stalk celery
1 large carrot
1/2 tablespoon butter
Salt and pepper
1 cup crushed tomatoes
1 cup water (or vegetable stalk)
2 servings pasta cooked according to package instructions
Fresh basil for garnish
What To Do:
- Dice the mushrooms, onion, celery, and carrot.
- In a large saucepan over medium heat, cook the vegetables in 1/2 tablespoon of butter. Season with salt and pepper and cook until tender.
- When the onion begins to appear translucent, add the crushed tomatoes and water. Mix and cover with a lid. Let simmer for about 5-8 minutes.
- Remove the lid and continue to cook the sauce until it reaches desired consistency. The longer it cooks, the thicker it will become.
- Serve over spaghetti or any pasta cooked according to package instructions.
- Garnish with fresh basil and serve.
